A small cast iron pan that is presentable enough to go from the stovetop to the table. You can perfectly sear a couple of thick salmon fillets skin side down, turn over when crisp and transfer to a hot oven to finish cooking. Take from the oven and finish with butter, white wine and fresh herbs and serve directly to the table (on a heatproof trivit of course)
