If you have ever visited any number of food markets in Japan the distinct aroma of freshly roasted houjicha often fills the air. Houjicha is roasted green tea which is also lower in caffeine than sencha. Chefs Armoury Houjicha is a premium houjicha made only from first harvest green tea leaves. Comes in a 80 gm packet.

Tasting notes

A light roast of sweet coffee and caramel notes on the nose reminiscent of a stroll through Nishiki markets in Kyoto. This tea has well rounded tannins with addictive toffee characters on the palate. It has a unique yet familiar flavour to western tastes.

Brewing notes

Before brewing:

Choose a teapot that allows the tea leaves to fully expand. If your pot has a drop in mesh infuser, for optimal flavour remove the infuser to allow the tea leaves to fully expand.
Use only enough water to fill the cup(s) that you will be using, as the tea is best poured out all at once so it does not overbrew.
Using these tips you will be able to experience the best flavour and you will also be able to brew your houjicha leaves up to 3 times.

Brewing instructions:

Add 3 heaped teaspoons of tea leaves (per 200mL) into a teapot. For houjicha the teapot does not need to be prewarmed.
Houjicha is best brewed with water straight from the kettle - 95° - 100° celsius. Pour hot water into the pot and let brew for 20 - 40 secs.
When pouring, fill half of each cup and then distribute water little by little into each cup so that each person receives the same strength brew.

Number of brews:

You can continue to brew the leaves 2-3 times.
In between brews, tap the teapot against the palm of your hand to loosen the leaves and leave the lid ajar so that the tea does not stew.
For 2nd and 3rd brews steep for approx 30 seconds. Multiple brews will impart a subtler flavour.
