Azuki beans are a vey important part of Japanese cuisine. They are included in savoury dishes such as Sekihan (sticky rice cooked with azuki bean) and are the basis of many sweets.
Anko (sweet bean paste) made from azuki beans is highly versatile as a filling in taiyaki (fish shaped cakes), daifuku (mochi balls) and as a simple topping for vanilla icecream.
