Kezuribushi are shaved thin flakes of katsuobushi - blocks of bonito fish that have been smoked and dried. Very fine flakes are used to garnish dished like okonomiyaki. Thicker flakes are used for making stock. Our kezuribushi is intensely fragrant and is excellent for making dashi whilst not being too thick to use as a garnish. Bonito is high in Inosinate and contributes to Umami taste in the stock.
