Chopper

Choppers are prolific in Chinese cuisine and generally of two types:

  1. Heavy duty - This is the thick and heavy style of chopper that you will see skillfully being used at the local BBQ kitchen to cut through whole ducks and ribs of pork. Very useful for saving your expensive chefs knives from chips and scratches.
  2. Vegetable chopper - This is used as an all purpose knife by Chinese trained chefs. Slicing, dicing, mincing and deboning are all tasks performed with this knife.
