Description
This rustic style deba is used for filleting fish and chopping through fish bones. It is a heavy knife - 315gm - and has a thick blade approx. 6-7mm at the bolster tapering down to ~ 3mm towards the tip of the blade. This knife has a great feeling of power and is ready to handle any filleting task. Unlike many deba that have a degree of polish and finesse when you use this blade it is not hard to imagine that you are an Edo period fisherman preparing the day's catch. You will find yourself making excuses to visit the fish markets, sometimes twice daily. Please note this is a single bevelled knife designed for right handed users only.
Chroma Haiku Kurouchi Tosa - Black Forged Series
These knives are the "real deal”.
Hand forged knives from Tosa, in Kochi prefecture, southern Japan. Unlike Seki or other recognized knifemaking districts whose history lies in the making of swords, Tosa has a long history of supplying blades to the forestry industry. In the early Edo period - 1600’s, farming and forestry were of great importance to the development of Japan. It was during this time that the blacksmiths of Tosa became renowned for their expertise in hand forging blades of great strength and edge retention. Although some automation has been introduced in the form of machine hammers, Tosa knives are still made in the same way as they have been for the past 400 years, by a highly skilled blacksmith using a coal furnace.
The Haiku Kurouchi Series knives from Tosa feature a core made from a Yasuki blue No.2 carbon steel hagane supported with softer iron jigane to provide flexibility. The blades are honed to a razor's edge, fitted with a comfortable black oval wooden handle and are finished with a stainless steel bolster branded with the Chroma Haiku falcon.

- Carbon steel is not rust resistant. We highly recommend a light coat of Camelia oil for extended storage and Northman rust cleaner for removing stains.
