240mm Tokujou Series Kiritsuke


This 240mm knife comes from the Tokujou Series by Sakai Takayuki. Tokujou translates roughly as high quality and is hand forged by the best blacksmiths in Sakai. The blades are made from Yasuki White 2 steel. Handles are made from traditional magnolia wood and feature a buffalo horn bolster. This knife is forged in hon-kasumi style which means soft iron is forge welded to hard steel - the perfect combination for excellent edge retention and ease of sharpening.

Kiritsuke is pretty much an all purpose chefs knife. The tip is well pointed, razor sharp and can be used for detailed cutting. From there the blade has a very gentle curve leading into a straight section that can be used much in the same way as an Usuba. This blade is also as excellent for slicing as it is for dicing. It is forged by Master Blacksmith Mr. Keijiro Doi. It is then hand finished by Master Knife Sharpener Mr Shõichi Nomura.
