Santoku / Multipurpose
Santoku literally means "three virtues" and refers to the three main cutting tasks the knife performs: slicing, dicing and mincing. We can think of a few others but Rokutoku doesn’t have the same ring. The Santoku knife is a light multipurpose kitchen knife used to cut meat, fish and vegetables. It has a wider blade than a western chefs knife which is useful for scooping up the food you have just cut. As well as the Santoku knife we have grouped a few knives here that you can use for a variety of tasks.
