Most knife sharpeners use machinery that overheat the blade causing knives to lose their hardness. This turns your $200 knife into a $20 knife. At Chef’s Armoury we understand the importance of keeping the blade cool using specialised water cooled rotary stones. All knives are hand finished on Japanese sharpening stones using traditional knife sharpening techniques from the knife making districts in Japan.
Remember the joy of using your knives when they were new, effortlessly slicing and dicing like a clumsy version of Gordon Ramsey? For a small price we can bring back that joy. Only the smallest amount of metal is removed from your knife, guaranteeing a longer life.
Think of it as taking your knives to the knife mechanic every 5,000 cuts or so.
"My knives aren't worth it"
Blunt knives are not safe to use and slip easily on the softest materials. If your knives can't slice through a tomato easily then you need to get them sharpened. At Chef's Armoury we can put an edge on any knife.
Expert Knife Repairs
At Chef's Armoury we are highly skilled at all types of blade repairs. If you have a chipped blade or broken tip it is well worth fixing. We can also reshape bolsters and sashimi knives.
