Hoba Leaf Miso 240g
Hoba Miso is a regional food native to Hida Takayama in Gifu prefecture Japan. Red miso is grilled over dried magnolia leaf with the addition of whatever ingredient you like (or none at all).
The flavour of the leaf permeates the miso as it is grilling and is a perfect partner to dry robust styles of Japanese sake like Oita Oni Koroshi Dohatsu Shoten.
Tip – Try with a combination of beef, spring onions and mushroom. Add a little extra mirin to the miso to give more sweetness and make the miso easier to stir.
Contains two hoba leaves and red miso (Soybeans, rice, salt, sugar, sansho pepper, mirin.)
- Wash & soak the hoba leaf in water until softened.
- Mix the miso paste with shallot, mushroom and beef. (Any kind of vegetable, meat or fish. You can also add butter for a unique twist.)
- Place aluminium foil over charcoal barbeque / stovetop with Hoba leaf on top. Grill miso paste etc directly on the leaf and enjoy with rice.
If you don’t have charcoal grill, use any grill / stovetop on low-medium heat.
