For those that prefer low maintenance blades, these knives are highly recommended. High carbon stainless steel called Ginsanko (G-3) by Hitachi is an excellent choice for rust resistant Sakai knives.
The hon-kasumi process involves joining a piece of hard steel to soft iron which is then hammer forged. The hard G3 stainless becomes the sharp and strong cutting edge whilst softer stainless becomes the supportive spine of the blade.
