Konosuke Sakai HD2 Ichii Wa-gyuto - 270mm
HD2 is the second generation of HD knives from Konosuke Sakai. The HD2 series like it predecessor is made from a semi stainless steel that features all the benefits of carbon (able to take a crisp cutting edge with good edge retention) with the addition of medium rust resistance. The blades are ground wafer thin to further accentuate the superior cutting edge.
Ichii wood has been chosen for the octagonal handles due to it's beautiful fine grain and is topped with a black buffalo bolster in true Sakai style.

- This is a semi-stainless blade and needs to be kept dry after use.
- The blades may form a dark patina after a while, this will not harm the knife in any way.
- As with many Sakai knives there is a small gap between the machi (notch) and the handle. This is the traditional method of setting Sakai blades.
- The length of the cutting edge is noted under "blade length" in the chart below.
