Konosuke Keiai T1 Kurouchi 210 Gyuto

The latest knife from Konosuke enters new territory for the maker, sporting a kurouchi rough blacksmith's finish on the top half of the blade. This 100% carbon steel knife is forged from pure Hitachi White 1 steel, and although in kurouchi style, is beautifully polished resulting in a matt satin finish along the blade path. It is also lightly acid etched adding to the dark character of the blade. The edge is finished on natural stones.

As the blade is clad in iron, it is not stainless and will react and change colour drammatically from first use. If you are comfortable with this reality, what you will get in return is a superior quality blade that will sharpen to a razor when maintained on waterstones.

Handle is walnut wood in the classic Konosuke Khii octagon shape.

Please note:

  • Keep dry and use camellia oil to protect against rust.
  • Being a super fine blade care should be taken not to chip the edge.
  • The actual length of the cutting edge is noted under "blade length" in the chart below.
