Konosuke have upped the ante with the MB line, designer aesthetics and solid performance.
The balance is quite 'blade heavy', even more so than usual for Japanese knives, so let gravity take its course.
Wooden saya and handle is crafted from burnt chestnut wood and no two are alike. The handles are a half hexagon shape with rounded underside, slightly oversized in length but yet still surprisingly light.
The deluxe saya has a magnet and internal catch to hold the blade in place without the need for a pin, to prevent the blade slipping out. To remove the knife from the catch, hold the saya on the Konosuke kanji brand mark, gently pull down on the saya and slide the knife out carefully.
The slightly hollow grind means for a fine edge. Forged from carbon steel clad in stainless steel, the exposed carbon cutting edge should be oiled to keep the knife in best condition. Expect a dark patina to form along the edge like all stainless clad carbon steel knives.
