When you think about Japanese knives, words such as sharp, accurate and perfect cuts come to mind. However all chef knives become blunt over time and need to be resharpened. But how do the world’s best chefs sharpen their knives?

In this sharpening masterclass learn the secrets used by chefs the world over. Leigh Hudson has been trained in Japanese Knife Sharpening techniques in both Sakai and Seki, Japan and for the past 15 years has been teaching Australia’s top chefs how to sharpen.

This demonstration will start with the basics – which sharpening stones to use, how to choose and maintain the correct angle, proper posture and techniques to sharpen a typical double beveled chef knife.

The second half of the session will move on to Kataba Japanese knives like the Yanagiba, which is used to slice perfect sashimi.
