Used primarily for de-boning poultry but can also be used to French cutlets or trim larger pieces of meat. This knife is strictly for right-handed users.
Nenox G-Type Series
The Nenox G-type knives sport a thin double hamaguri bevel (convex edge grind) with a 45:55 microbevel for extra strength. The high carbon stainless steel blades are easy to look after and can be sharpened to an exceptional edge on Japanese waterstones. The handles, which are made from Japanese paper micarta have double stainless bolsters to give the knife a solid feel.
Although the G-Type are their entry level series they still have the exceptional fit and finish that Nenox knives are famous for.
The Nenox brand was born in 1993 due the demand for stainless steel western style blades in Japan. At that time Tokyo chefs were using European made stainless blades but complained about a lack of sharpness compared to carbon steel.
After years of designing, repeated testing of shape, steel type and sharpening Nenohi brought their first western style knives to market under the brand Nenox.
