Saji Custom 240mm Gyuto for Chef's Armoury

For those that like larger chef knives this custom Takeshi Saji knife will not disappoint.

Please Note: The handle colour varies from light to quite deep ochre.

101 Layer Ochre Cowbone Handle - Limited Edition

Saji-san's knives follow an organic line from the tip of the blade to the handle to create a work of art.

  • As this knife is handforged the pattern is unique to each blade
  • 50/50 edge grind make these knives suitable for left and right handed users

These knives deserve luxurious surrounds, so each comes with a hand made kiri wood box to rest in after a hard day in the kitchen. 

As each knife is handmade the textures, colours and measurements may vary.

Please note: The photos show a decorative pin but this feature was discontinued to increase the structural integrity of the handle.

Care Instructions

Knife care for stainless steel knives

  • Never put in the dishwasher.
  • Dry thoroughly after handwashing and do not store unless fully dry.
  • Do not cut through bones, frozen foods or extremely dense items.
  • Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
  • Use Japanese waterstones to sharpen your knife.
