120mm Petty Knife

A handy Japanese knife for a multitude of fiddly tasks in the kitchen.

Kanetsune PRO

Produced by Kanetsune bladesmiths in Seki Japan. This series is made from AUS-10 stainless steel. (Similar carbon content to VG10 but AUS-10 has the addition of Silicon for strength and Nickel for toughness).

The black plywood handles are durable and well rounded for comfortable use and meet the blade with a fully integrated stainless steel bolster.

The Kanetsune PRO knife series is a true workhorse range designed for daily professional use. As with all Japanese knives we recommend resharpening using waterstones.

Care Instructions

Knife care for stainless steel knives

  • Never put in the dishwasher.
  • Dry thoroughly after handwashing and do not store unless fully dry.
  • Do not cut through bones, frozen foods or extremely dense items.
  • Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
  • Use Japanese waterstones to sharpen your knife.
