At just 135mm, this little knife punches well above its weight. Perfect for trimming, peeling, slicing and all those fiddly jobs where a larger knife feels cumbersome. Small in size, but surprisingly indispensable in the kitchen.

Please note: The handle colour in this batch is a light tone similar to the photo, different from previous batches.

Ochre Cowbone Series - Limited

This range captures everything that makes a Saji knife distinctive. The ochre cowbone handles, inspired by traditional hunting knives, are paired with forged R2 steel clad in nickel Damascus. The result is a knife with real presence: solid in the hand, robust in its geometry and built with the character of a dependable workhorse. Produced in limited numbers, only a small selection makes its way to us each year.

  • Cutting edge is R2 powder steel
  • Nickel damascus
  • Solid cowbone handles
  • Stainless steel bolster
  • Excellent fit and finish
  • As this knife is handforged the pattern is unique to each blade
  • 50/50 edge grind make these knives suitable for left and right handed users

These knives deserve luxurious surrounds, so each comes with a hand made kiri wood box to rest in after a hard day in the kitchen.

As each knife is handmade the textures, colours and measurements may vary.

About Saji Uchihamono

Takeshi Saji is more than a master blacksmith. He's one of the founding legends of Japanese custom knife making. The third generation of the Saji Uchihamono workshop in Echizen, Saji-san helped transform an age-old blacksmithing tradition into something altogether more ambitious. At a time when Japanese knives were largely defined by function and tradition, he dared to think differently. Bold designs, outrageous Damascus finishes and an almost rebellious approach to craftsmanship. He wasn't simply making knives; he was creating an entirely new direction for Japanese cutlery, inspiring a generation of makers who followed. In an industry full of talented blacksmiths, Saji-san is one of the originals. A genuine trailblazer whose influence can be seen across the industry today.

The baton has passed to Kazuo Nomura, and it's difficult to imagine better hands. Saji-san's son-in-law, Nomura is no mere successor riding on the family name. He's an exceptionally talented blacksmith in his own right, having spent decades learning alongside one of the greats while forging a reputation of his own. He has the skills, experience and bloody-minded dedication to keep the Saji workshop at the top of its game. This isn't simply a legacy being preserved; it's a new generation taking the reins.
