Namishibuki Santoku - 180mm

A practical and beautiful damascus santoku by Kanetsune. Strong, sharp and light.

Kanetsune Namishibuki Knife Series

Namishibuki translates as 'wave splash' and this has been replicated in the pattern of the 101 layers of damascus steel. A special surface treatment has been given to the blade to further accentuate the contrast between the hard and soft layers of steel but also to allow the blade to slip through foods with less resistance.

The core material is made from a special high speed powder steel (also stainless) that both takes and holds an excellent edge. This combined with the overall thinness of the blade convey a feeling of sharpness that will bring a smile to your face. The handles are durable black pakkawood with red micarta rings.

This range distils everything Kanetsune has learned about knife making into a single series (more knives to come). No expense has been spared and all work has been completed by their most experienced craftsmen.

Care Instructions

Knife care for stainless steel knives

  • Never put in the dishwasher.
  • Dry thoroughly after handwashing and do not store unless fully dry.
  • Do not cut through bones, frozen foods or extremely dense items.
  • Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
  • Use Japanese waterstones to sharpen your knife.
