Saji 225mm R2 Chuuka Bocho for Chef's Armoury
Chuuka Bocho basically translates as Chinese Style Cooking Knife but shouldn’t be pigeonholed into just preparing Cantonese cuisine.
Ever used a Nakiri and wished it was so much bigger? Do you constantly complain ‘Japanese knives are just too light’? Did you shed a tear when you heard the news about iron Chef Chen?
If you answer yes to at least 2 of the above, go and get your credit card already. Just holding this knife inspires a trip to the market to buy a bag of onions and a pair of swimming goggles.
Saji also makes a VG10 version of this knife that is a little lighter (both in weight and the wallet) but why not go all in and get the premium R2 version with extra density and edge retention. This Chuuka Bocho is classified as general purpose and can be used for a wide variety of vegetables and proteins but shouldn’t be used for cutting bones.

Care Instructions
Knife care for stainless steel knives
- Never put in the dishwasher.
- Dry thoroughly after handwashing and do not store unless fully dry.
- Do not cut through bones, frozen foods or extremely dense items.
- Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
- Use Japanese waterstones to sharpen your knife.
