Saji 225mm R2 Chuuka Bocho for Chef's Armoury
Chuuka Bocho basically translates as Chinese Style Cooking Knife but shouldn’t be pigeonholed into just preparing Cantonese cuisine.

Saji also makes a VG10 version of this knife that is a little lighter (both in weight and the wallet) but why not go all in and get the premium R2 version with extra density and edge retention. This Chuuka Bocho is classified as general purpose and can be used for a wide variety of vegetables and proteins but shouldn’t be used for cutting bones.
