Gyuto - 210mm Japanese Chef Knife

Multipurpose Japanese chefs knife by Kanetsune.

Kanetsune Damascus Chef Knife Series

Produced by Kanetsune bladesmiths in Seki Japan. Blade has a VG10 core with 33 layers of Damascus steel creating Kanetsune’s signature damascus pattern. The blades are finished with a right hand side angle of 20 degrees and on the left approx 10 degrees. This edge profile enables a far smoother cutting ability than a standard European bevel.

This Kanetsune knife series has a higher HRC (industry hardness rating) of 60-61 compared to most western knives, which gives the Kanetsune Series a superior longer lasting sharp edge.

Care Instructions

Knife care for stainless steel knives

  • Never put in the dishwasher.
  • Dry thoroughly after handwashing and do not store unless fully dry.
  • Do not cut through bones, frozen foods or extremely dense items.
  • Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
  • Use Japanese waterstones to sharpen your knife.
