Bonito Shaver
Professional bonito shaver handmade from oak (plane) and tamo wood (housing). Superior blade handforged from 2 layers of hagane - carbon steel with excellent sharpness. The blade can be removed for resharpening on Japanese waterstones.
Use to shave wafer thin slices of dried smoked bonito - katsuobushi - for making the freshest of dashi. You can buy whole pieces of katsuobushi here
