Kiritsuke - 210mm Japanese Chef Knife

Traditionally the Kiritsuke has a single bevelled edge that can be challenging to both use and sharpen (not this one). The Ichizu kiritsuke by Kanetsune maintains the hipster cool shape of the kiritsuke but with a very user friendly double bevel.

Kanetsune Ichizu Series

Produced by Kanetsune bladesmiths in Seki Japan. The blade is created from a single solid layer of VG10 steel and matched to a traditionally shaped handle made from durable pakkawood. The thin, sharp blades give a silky cutting experience especially when using more of a slicing style action.

Extra attention has been given to maximise sharpness and cutting precision with this Ichizu kiritsuke.

The gorgeous octagonal pakkawood handle gives a secure grip.

An excellent choice for those who enjoy an accurate cutting experience.

Note: For those of you with a heavy handed cutting style, this series is not the best choice.

Care Instructions

Knife care for stainless steel knives

  • Never put in the dishwasher.
  • Dry thoroughly after handwashing and do not store unless fully dry.
  • Do not cut through bones, frozen foods or extremely dense items.
  • Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
  • Use Japanese waterstones to sharpen your knife.
