Kiritsuke - 210mm Japanese Chef Knife
Traditionally the Kiritsuke has a single bevelled edge that can be challenging to both use adn sharpen. The Ichizu Kiritsuke maintains the hipster cool shape of the kiritsuke but with a user friendly double bevel.
Kanetsune Ichizu Series
Produced by Kanetsune bladesmiths in Seki Japan. The blade is created from a single layer of VG10 steel and matched to a traditionally shaped handle made from durable pakkawood. The thin, sharp blades give a silky cutting experience especially when using more of a slicing style action.
An excellent choice for those who enjoy an accurate cutting experience. For those of you with a heavy handed cutting style, this series is not the best choice.
