Gyuto - Chefs Knife Multipurpose cooks knife

If you’re a chef or home cook and own one decent knife you’ll probably own a western chef's knife. The Gyuto is the Japanese equivalent – but designed with precision in mind as the starting point rather than strength.

The Gyuto is a double-bevel, multipurpose blade typically ranging from 180mm to 270mm. The profile is similar to a Western chef's knife, curved belly, pointed tip but the Gyuto blade is thinner, harder, and ground to a more acute angle. The geometry of a Gyuto is what makes a difference. It moves through food with less resistance, gives you cleaner cuts, and holds its edge longer between sharpenings. As the most versatile type of knife the Gyuto suits both home cooks and professional chefs.

If you're buying your first Japanese knife, start here. The Gyuto handles the majority of prep work, breaking down proteins, slicing vegetables, mincing herbs - without asking you to change your technique dramatically. If you already cook with a Western chef's knife, the transition is straightforward.

Compared to a Santoku, the Gyuto gives you more length and a pointed tip, which makes it better for slicing larger cuts of meat/veg and more detailed work. Compared to a Nakiri or Deba, it's a generalist - it won't outperform a specialist knife on its home turf, but it will cover many tasks a specialist knife can't.

When choosing, consider blade length first. A 210mm Gyuto suits most people. Opt for a 240mm if you prefer longer knives. Or drop down to a 180mm if you prefer smaller.

If you're new to Japanese knives, stainless or semi-stainless steel is easier to maintain than carbon. Handle shape - wa (such as octagonal) or western comes down to personal preference and grip style.
