Hado Blue Carbon Steel 180 Bunka

Sumi B1D Series

The blades are gloriously tall, giving it the sort of road presence normally associated with a Range Rover. Behind the edge, it's thin, with a subtle hollow grind that allows it to slip through vegetables, meat and herbs with all the resistance of a hot cannonball through custard.

The B1D series are forged by Tanaka-san, which immediately tells you two things. First, it's serious. And second, somewhere in Japan, a man has spent more time thinking about steel than he has about himself.

Then there's the steel. Blue #2 at the core, clad in soft iron and dressed in a beautiful Damascus finish. This isn't stainless, sensible, safe steel. No. This is proper steel. The sort that develops character, demands attention, and rewards you with an edge so sharp it makes lasers seem a bit half-hearted

The handles are made from padouk with a deep red-orange tone that over time mellows into a richer, darker tone, much like a fine whisky ageing in a barrel, gaining character rather than simply getting old.

Hado Knives

Hado knives are produced by Fukui Co., Ltd. in the historic knife making town Sakai, Osaka and have quickly gained a cult following among those in the know.

Their Sakai based workshop houses a team of togishi (sharpeners) who believe knife making is about more than achieving exceptional sharpness; it is about expressing individuality, dedication, and passion through their work. Each artisan contributes their unique skills and character, pouring their soul into every blade they create.

Care Instructions

Knife care for carbon steel stainless clad knives

  • Never put in the dishwasher.
  • The knife is clad in stainless steel to protect against rust however the exposed carbon steel core (at the cutting edge) is susceptible to rust.
  • Do not leave wet overnight or the knife may rust. Dry thoroughly after washing and do not store unless fully dry.
  • A grey/black patina will form on the edge. This is totally normal for carbon steel and aids in protecting against rust.
  • Do not cut through bones, frozen foods or extremely dense items.
  • Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
  • Use Japanese waterstones to sharpen your knife.
  • We highly recommend camellia oil and rust cleaner for maintenance.
