Profile
Yukihiro Custom W1 Chopper
A rustic forged chopper that feels like something in between a Nakiri and fully fledged No1 Chuuka. This style of chopper leans towards vegetable and boneless meat. (do not use on bones)
Yukihiro Japanese Knives
Yukihiro Sakai is a blacksmith who chooses the harder path, favouring traditional techniques and hands-on craftsmanship over shortcuts.
Forged from White #1 steel using the warikomi method, each blade begins with hand-split iron into which a core of White #1 steel is inserted before being hot-forged. The dark furnace scale is deliberately left on the blade, adding a rugged, distinctive finish while offering some protection against rust. These blades have more heft than you usual Japanese knife and are made to cut with intent. A solid workhorse that you'll want to use everyday.
Originally fitted with a simple handle and plastic ferrule, we felt the blade deserved something more substantial. To better complement the quality and character of Sakai’s forging, we commissioned a hefty wenge handle — a fitting match for a knife that is as unapologetic in its construction as it is in its appearance.
Please note: this is a carbon steel knife and can rust if not kept clean and dry.
- Made by hand
- Wenge handle with blonde pakkawood bolster
- Solid feel
- Core of White #1 carbon steel, clad in matt black iron
- 50/50 edge grind suitable for left and right handed users
Note:
- As the handle is natural wood, colour and grain of wood will vary from the photos.
- Carbon steel blades will change colour and tarnish over time. Carbon steel is prone to rust if you leave it wet, so to maintain it dry and ideally oil the knife before putting it away. The black finish helps protect the blade from rust.

Care Instructions
Knife care for 100% carbon steel knives
- Never put in the dishwasher.
- Do not cut through bones, frozen foods or extremely dense items.
- This knife is 100% carbon steel, due to the nature of carbon steel this knife will tarnish and form a patina. This is to be expected and is nothing to worry about. The patina also helps protect against rust.
- Do not leave wet on the bench or the knife may rust. Dry thoroughly after washing and do not store unless fully dry.
- Always cut with a smooth action and never twist the blade, sideways pressure will damage the blade.
- Use Japanese waterstones to sharpen your knife.
- We highly recommend camellia oil and rust cleaner for maintenance.
