Okimoto Mori 270mm Chef Knife
For those who have a big knife but don't wont the extra baggage we've kept the Mori 270 on a strict diet to restrict weight. Big but not unwieldy.
Okimoto Mori Series
The Mori series boasts one of the thinnest blade profiles available. Straight out of the box they cut with a little resistance but a little tickle on waterstones will bring them to full potential.
One advantage of the blade being so thin is even after several sharpening sessions it won’t need as much work to keep a useful blade profile. Of course being a thin blade, extra care needs to be taken not to chip the edge so please cut responsibly.
Made of Aichi stainless molybdenum vanadium steel they are a little softer than the rigid VG10 blade, which makes for easier re-sharpening. The final edge is offset on the right hand side for accuracy for right handers. Lefties can correct the bevel by adding to the microbevel on the back side.
The Okimoto Mori knives feature solid pakkawood western handles with a seamless stainless steel bolster.
